WEI-CHUAN USA CREATIVE RECIPE! PULLED PORK LOTUS BAO

Pulled Pork meets Bao with the help of @weichuanusa Lotus Leaf Buns. We love using these frozen buns when cooking for a crowd because they’re perfect for any occasion. The slight sweetness of these pillowy buns go amazing with smoky rich pulled pork that is guaranteed to be fall apart tender when done in the pressure cooker. Scorch your meat a bit to give your filling that signature charred flavor in less than half the time it’d take to make it traditionally. You can also sub the pork for any protein of choice.

  • Wei-Chuan USA Lotus Leaf Buns, steamed
  • 3 lbs Pork Butt/Shoulder, cut into large chunks
  • 1 Onion, chopped into large chunks
  • 4-6 cloves Garlic
  • 3 TB Fish Sauce
  • 2 TB Neutral Oil
  • Water
Additional Ingredients

4 TB BBQ Rub*

  • Yellow Mustard
  • BBQ Sauce, to taste
  • Fried Onions, for garnish
  • Scallions, thinly sliced for garnish

SLAW

Combine all ingredients in a bowl and allow to sit in the fridge to marinade.

  • 3 cups White & Red cabbage, thinly shaved
  • 2 stalks Scallion, thinly sliced
  • 1/2 c mayonnaise
  • 2 TB Whole Grain Mustard
  • 2 TB Sugar
  • 1 tsp Kosher Salt
  • 2 TB Apple Cider Vinegar

BBQ RUB

  • 1 TB Kosher Salt
  • 2 TB Chili Powder
  • 2 TB Smoked Paprika
  • 1 TB Granulated Garlic
  • 1 TB Onion Powder
  • 1 TB Instant Espresso
  • 4 TB Light Brown Sugar
  • 1 tsp Ground Cumin
  • 1 tsp Black Pepper
  • 1 tsp MSG
Cooking instructions

Rub pork with mustard and BBQ seasoning. Sear in pressure cooker over medium-high heat with neutral oil until slightly scorched. Add aromatics, fish sauce, and enough water to cover meat. Bring to boil and skim before closing the pressure cooker. Cook for about 1hr.

Remove pork from braising liquid. Shred pork and combine with BBQ sauce and additional BBQ rub as needed.

Cooking time may vary based on equipment and quantity cooked in equipment. Must be cooked to an internal temperature of 165°F or above as measured by using a thermometer.

Steam buns as directed on packaging. Fill buns with pulled pork, slaw, and top with fried onions and scallions. Enjoy!
