In a large skillet, melt butter, add cinnamon and stir. Add apples, water, lemon juice and sugar to the skillet and stir until apples soften (about 5-8 minutes).
In a small bowl combine corn starch and water to make a slurry. Add corn starch slurry to the apple mixture and stir until thickened. Remove from heat and let cool.
In a deep fryer or large pot, heat oil to 350° (there should be enough oil to cover the egg rolls; at least 4 inches)
Whisk together one egg in a small dish. Set an egg roll wrapper down positioned like a diamond.
Add a scoop of apple pie filling toward the bottom point and roll the point up until it reaches the end of the filling and then tuck in the side corners. Continue to roll from the bottom. Before you finish rolling, use your finger to spread the egg wash on the tip to seal the roll. Repeat this process 10-11 times or until you’ve run out of apple pie mixture.
Carefully add 3-4 egg rolls into the oil and fry, turning occasionally, until they are golden brown.
Remove from oil and transfer to a plate lined with paper towels. Repeat the process with the rest of the egg rolls.
In a shallow dish, add cinnamon sugar and roll the egg rolls in them. Serve with caramel sauce for dipping or drizzling (can be store bought or homemade).
