Spooky Shrimp Spider Bites!

A super tasty shrimp ball covered in delicate @weichuanusa.inc Spring Roll Shells that are dyed black to look like little critters for your next Halloween bash! Served best with a bloody delicious mango-peach sweet & sour sauce 🎃 🕷️ 🍤

Shrimp Spider Bites

  • 1 lb shrimp, cleaned
  • 1 egg white, lightly beaten
  • 1 TB fish sauce
  • 1 tsp sugar
  • 1/2 tsp MSG
  • 1 TB corn starch
  • 1 tsp baking powder
  • 1/2 tsp sesame oil
  • 1 TB neutral oil (& additional for deep frying)
  • ½ tsp white pepper
  • Wrapper -Wei Chuan 6” Spring Roll Sheets, thinly sliced -Black gel food coloring, diluted in water

Bloody Mango-Peach Sweet & Sour Sauce

  • ½ c Bonne Maman Mango & Peach Preserves
  • ½ tsp salt
  • ½ c water
  • ¼ c white distilled vinegar
  • ¼ c sugar
  • 1 tsp cornstarch slurry
Cooking instructions

Shrimp Spider Bites

Combine all shrimp bite ingredients in food processor & pulse until combined but not over mixed.

Prepare food coloring. Dilute in ½ cup of water to preference in color. Approximately 2-3 drops of gel coloring.

Slice spring roll shells into ½” wide strips.

Gradually mix food coloring with spring roll strips until desired color is achieved. Portion & roll shrimp paste into balls about 1 Tb each.

Roll & cover balls with strips & allow to set in fridge, 20 min.

In a saucepan, heat 2” of neutral oil to 350°F. Fry shrimp bites in batches until golden brown, approximately 3-4 minutes. Drain well.

Serve with Bloody Mango & Peach sauce.

Bloody Mango-Peach Sweet & Sour Sauce

Combine all ingredients except slurry in saucepan and bring to simmer

Add slurry until thickened & allow to cool before serving.
