Shrimp Spider Bites
Bloody Mango-Peach Sweet & Sour Sauce
Combine all shrimp bite ingredients in food processor & pulse until combined but not over mixed.
Prepare food coloring. Dilute in ½ cup of water to preference in color. Approximately 2-3 drops of gel coloring.
Slice spring roll shells into ½” wide strips.
Gradually mix food coloring with spring roll strips until desired color is achieved. Portion & roll shrimp paste into balls about 1 Tb each.
Roll & cover balls with strips & allow to set in fridge, 20 min.
In a saucepan, heat 2” of neutral oil to 350°F. Fry shrimp bites in batches until golden brown, approximately 3-4 minutes. Drain well.
Serve with Bloody Mango & Peach sauce.
Combine all ingredients except slurry in saucepan and bring to simmer
Add slurry until thickened & allow to cool before serving.
