National Chicken Dumpling Soup for the Soul Day

Pumpkin & Chicken Dumpling Soup to celebrate National Chicken Soup for the Soul Day!!! 🍲🍲🍲 We used Wei-Chuan USA's Dumpling King series for this recipe to elevate the flavor of the broth. The pumpkin soup is perfect for golden winter vibe and filling with the touch of dumplings. Shoutout to Van FOOD IS A FOUR LETTER WORD for creating this recipe for us!

  • 1 lbs Kabocha (Japanese Pumpkin), cut into 1 inch pieces
  • 21 oz Wei-Chuan USA Vegetable and Chicken Dumplings
  • 4 Cups Chicken Broth
  • 4 Ginger Slices
  • 1 Teaspoon Chicken Bouillon
  • 1 Teaspoon Fine Sea Salt
  • Chili Oil, optional garnish
  • Chopped Cilantro, optional garnish
  • Chopped Green Onion, optional garnish
Cooking instructions

Add Kabocha and Ginger slices to a pot, add 4 Cups Chicken Broth and bring to a boil, then lower the heat to a simmer for 5 minutes.

Add 1 Teaspoon Chicken Bouillon, 1 Teaspoon Fine Sea Salt, Wei Chuan Vegetable and Chicken Dumplings to the broth. Once it comes back to a simmer, give it a quick stir, cover and simmer for an additional 10 minutes.

Remove ginger slices, taste and season the broth with more salt if needed.

Ladle into serving bowl and top with Chopped Cilantro, Chopped Green Onion and Chili Oil.

Must be cooked to an internal temperature of 165°F or above as measured by using a thermometer
